Plan approval—Plan contents.

The owner of a mobile food unit shall include in the plan required by WAC 246-215-09110:
(1) Menu and food preparation steps;
(2) Floor plan;
(3) equipment specifications and location;
(4) Finish schedule;
(5) Proposed itinerary or sites to be served;
(6) Source of water and specifications of the on-board plumbing;
(7) Site used for sewage disposal;
(8) Availability of restrooms for employees;
(9) Operating procedures; and
(10) Cleaning schedule.
